I started this 101 Cookbooks recipe on Saturday morning and then failed to complete it in time for our dinner that night. On one of the nicest days this summer, I was determined to get out of the kitchen and enjoy the beach. One of our weekend guests pointed out that this double broccoli quinoa seems a little labor intensive recipe and I can’t really argue. You need to toast the almonds, chop the broccoli, cook the quinoa.  As long as you have a food processor, the broccoli pesto is easy as can be, but there is some prep to this side salad. It’s hard to beat Heidi Swanson’s photos… but I felt so badly about finishing up on Sunday that I took a few quick shots for Miranda.
